BREAKFAST BARS

INGREDIENTS

1 x 397g can condensed milk
250g rolled oats (not instant)
75g shredded coconut
100g dried cranberries
125g mixed seeds (pumpkin, sunflower, sesame)
125g natural unsalted peanuts
Serving Size : Makes 16
METHOD

1.Preheat the oven to 130°C/gas mark 1/2, and oil a 23 x 33 x 4cm baking tin, or use a throwaway foil one.
2.Warm the condensed milk in a large pan.
3.Meanwhile, mix together all the other ingredients and then add the warmed condensed milk, using a rubber or wooden spatula to fold and distribute.
4.Spread the mixture into the tin and press down with the spatula or, better still, your hands (wearing disposable vinyl gloves to stop you sticking), to even the surface.
5.Bake for 1 hour, then remove from the oven and, after about 15 minutes, cut into four across, and four down to make 16 chunky bars. Let cool completely.

I absolutely love these breakfast bars, quite often I use pecans instead of the natural peanuts which works really well. I've tried them with raisins, but I do prefer them with cranberries!

Cranberries arent available where i come from (srilanka) so i used dried mangoes and added a little lime zest.

I make it with half-fat condensed milk and it tastes great. Any nuts (eg cashews) or dried fruit seems to work although I agree Cranberries are best. Love them - always have a box of them in the larder to take to golf, tennis or whatever as a quick energy booster.

I have made this regularly since the book was released....my husband takes one to work each day and I often get requests to make a batch for him to take in. Any combo of nuts / dried fruit will work but our favourite is date and walnut.

Sooooo delicious. . . I created a vegan version by using tofu whipped with maple syrup instead of the condensed milk. There have been only rave reviews from everyone. Thank you for this recipe, Nigella : )

Very good! I used dried apricots instead of the cranberries, and chopped almonds instead of the peanuts. Lovely and chewy, filling too! Would definitely make these again!

This one sounds like a perfect thing to make! But can you use coconut milk instead of condensed milk in this recipe?

Amazing, and so easy! I left them in the oven for only 45 minutes, and you can really put whatever you want in these! Great thing to have around.

Finally found the condensed milk in the store. And I loved them! Made them with almonds, chocolate and dried mango - so good! A perfect ending for my lunch, as an energy bar after workout, or just when I want something nice to eat as a snack :)

Hi, I made these today for the 1st time my husband has not stopped eating them. He resented me bringing some to my family for a taste. I used pecans & cashews instead of peanuts, I personally prefer something a little sweeter. Maybe some golden syrup/honey but my son & husband think they are perfect as they are, and so very easy to make. Great energy food & probably good for you too provided you don't eat too much that condensed milk is sooo loaded with calories!!!!! Happy family here, I've downloaded so many recipes now I hope to try them all. Thanks Nigella, efficent & tasty as usual.....
