LEMONADE SCONES

INGREDIENTS

3 cups self raising flour
1 cup cream (Aust thickened cream)
1 cup lemonade
INTRODUCTION

These scones are fantastically easy and delicious. Use normal Australian thickened cream or equivalent eg. double cream, not half and half.
METHOD

1.Place all ingredients in a bowl and combine gently. Knead gently and pat out until 3 cm thick and cut out with a 5cm scone cutter.
2.Place on lined tray, brush with milk and bake at 200 degrees for 15 - 20 minutes until top is browned.

I bake these for my hair salon and all my clients ask for the recipe! Although I use 2 cups of flour to 1 cup lemonade and cream. I love to dollop scone mix into a 12 pc cupcake tray squirted with a little oil. They sit up on their flat bottoms and there is no need for kneading or cutting! My father-in-law begs for them every time he visits!

Thanks Dabrita! I have a 'normal' scone recipe, but fancied making the lemonade version with my kids. The concept of lemonade in a recipe was amazing to them. They worked fabulously - of course:) Great stuff.
