CHICKEN SCHNITZEL WITH BACON AND WHITE

INGREDIENTS

1 teaspoon garlic oil
4 rashers streaky bacon
4 chicken escalopes approx. 125g each
100ml white wine
Serving Size : Serves 4
INTRODUCTION

This is one of those fast and easy suppers that makes you - and whoever else is eating it - purr with delight.
METHOD

1.Put the oil in a frying pan and add the bacon.
2.Fry till the bacon is crisp and the pan is full of bacony juices. Remove the bacon to a piece of foil, wrap it and set it aside for a moment.
3.Fry the chicken for about 2 minutes a side, until there is no pinkness when you cut into a piece. Make sure the pan’s hot so that the escalopes catch a little, turning beautifully bronze.
4.Remove the chicken to a serving plate and quickly crumble the bacon you’ve set aside into the pan, then pour in the wine, letting everything bubble up, and, finally, pour over the chicken pieces.
ADDITIONAL INFO

I love this with some fine green beans – even my children do – and if you have any schnitzel left over, chop it up and heat with a little cream and Parmesan to make a quick pasta sauce.

This recipe is absolutely gorgeous! The flavours work so well together, one breast is never enough! This is my husband’s favourite recipe from Nigella Express and we sometimes have it with the Macaroni Cheese dish from the same book. Pure stodgy indulgence - but so worth it!

Divine! I served this with Bratkartoffeln and baby peas. I don't think I'll ever have any schnitzel left over to try the pasta sauce though Nigella!

Yummy and fast recipe. Only use a good quality dry cure bacon, though. Could have done with a tad more liquid. I used half the quantity of oil and wine for one serving and it wasn't anything like near enough.

So so easy to make! A definite new favourite at my flat. I added a splash of double cream to the sauce for an extra indulgence. Amazing!

Delicious and tender!! I have slightly modified the recipe: instead of adding oil to fry the bacon, I've used a non-stick pan and once the stripes were ready I have removed them and added a bit of water to dilute the juices, where I have then cooked the chicken, as per recipe.
