BANANA PANCAKES

INGREDIENTS

3oz butter
7oz flour
2 tablespoons sugar
3 teaspoons baking powder
1/4 teaspoon salt
2 small ripe bananas (peeled)
240ml milk
2 eggs
1/2 teaspoon vanilla essence
(maple syrup and sliced bananas as topping) your choice
INTRODUCTION

light and fluffy really creamy (dessert or starter fab for brekkie)
METHOD

1.Melt 2oz of the butter in a pan on medium heat. Leave to cool.
2.Put the banana in a bowl and mash it up with a fork add the eggs, milk, vanilla and melted butter. Give it a quick mix put to one side.
3.In a mixing bowl add the dry ingredients Give a quick mix. Add the banana mixture and mix till all blended (There will be lumps from the banana)
4.On medium heat add the rest of the butter and melt it pour into a bowl.
5.Then add 1/4 cup full of the batter to the pan and cook flip over to cook on both sides place on plate and pour in the butter give a quick swirl around the pan and back into the bowl. Repeat with the rest of the mixture. voila

This recipe was so yummy. I've never made pancakes before and this was a great first go. Few variations: used 7oz of self-raising flour instead of plain flour, salt, baking powder. I added an extra banana, Forgot to add sugar but did add milk chocolate chips and white chocolate chips. We had it with a little golden syrup over the top. Divine! My husband said I'm definitely going to have to make that again :)
