INGREDIENTS
1lb of self-raising flour
½ lb. of butter
½ lb. of caster sugar
¼ teaspoon of nutmeg
¼ teaspoon of mixed spice
Pinch of salt
2 ounces of dried fruit peel
4 ounces of currants
6 ounces of sultanas
3 beaten eggs
6 tablespoons of milk
1 tablespoon of marmalade
1 tablespoon of syrup
INTRODUCTION
No funeral in wales is complete without a loaf of Bara Brith! This is a modern version of a V old recipe.
METHOD
1.
Heat the oven to 170ºC.
2.
Sieve the flour, add the nutmeg and the mixed spice and a pinch of salt.
3.
Rub the butter into the flour and then add the sugar and the dried fruits and mix well.
4.
Beat the eggs with the milk and add to the mixture.
5.
Finally, mix the marmalade and syrup into the rest of the ingredients.
6.
Pour the ingredients into a 1lb. baking tin, greased with butter or lined with paper.
7.
Bake for an hour-and-a-quarter to an-hour-and-a-half
