CRISPY CINNAMON CHRISTMAS COOKIES
LIV
INGREDIENTS

200 g butter
200 g sugar
2 tablespoons sirup
300 g white flour
3 teaspoons cinnamon (but make them BIG!)
1 teaspoon baking soda
Topping: almonds/nuts, extra cinnamon and sugar
INTRODUCTION

I don´t know if these are typically Norwegian, but in my family we´ve made them for years. In my mothers handwritten recipe book she has added "the family´s favourites, Christmas 1982". All I can say is that they are VERY good.
METHOD

1.Mix butter and sugar. Add the rest of the ingredients except the "topping". Roll the dough and make small "sausages" as long as the baking tray, three on each tray, and push them flat with your fingers...
2.Top them with 1 decilitre chopped almonds or hazelnuts or a mix of the two, extra cinnamon and sugar.
3.175-200 Celsius for 10-15 minutes. They are soft and good right after you take them out of the oven, but even better when they have cooled down and crispy.
4.MMMMMMmmmmmmmm....
5.Tip: Try this as a snack when you´re drinking beer at the Christmas party...

I'm confused about the syrup too! Which one is it???

I made these and used golden syrup the sausage shaped bit confused me as in does it make seperate cookies or long ones? I rolled my mixture into little balls and baked them so they formed indivudal cookies, they were very very very nice and moorish. I also made some vegan subsitute ones and they were good too. I will be making them again defo but maybe not too soon Im' still a bit full from Christmas

These cookies are wonderful, but the flattened logs must be sliced into strips while warm. A pizza slicer works very well.
