BANANA AND BUTTERSCOTCH MUFFINS

INGREDIENTS

3 very ripe bananas
125ml vegetable oil
2 eggs
250g flour
100g caster sugar
1/2 teaspoon bicarbonate of soda
1 teaspoon baking powder
150g butterscotch (or chocolate) morsels

METHOD

1.Preheat the oven to 200°C/gas mark 6 and line a 12-bun muffin tin with muffin papers.
2.Mash the bananas and set aside for a moment.
3.Pour the oil into a jug and beat in the eggs.
4.Put the flour, sugar, bicarbonate of soda and baking powder into a large bowl and mix in the beaten-egg-and-oil mixture, followed by the mashed bananas.
5.Fold in the butterscotch morsels, then place equal quantities in the prepared muffin tin – I use an ice cream scoop and a spatula – and bake in the oven for 20 minutes.
ADDITIONAL INFO

White chocolate morsels can be used in place of the butterscotch ones and my children seem to love both with equal fervour, though I’m pretty fond of these with dark chocolate chips, too.

Easy and fast to make, really nice and soft muffins. I had to substitute the butterscotch whit daim (a Scandinavian hard nut caramel covered in chocolate), as butterscotch morsels aren't available to buy in the shops here. I'll definitely make them again. :-)

These are so lovely and so quick to make. I didn't have any butterscotch or chocolate to hand but I did have plenty of bananas so used four good-sized bananas instead. Absolutely yummy :)

I would love to try this recipe as Nigella intended, but cannot source buterscotch (or chocolate) morsels. Has anybody been successful.

My husband says "it's amazing, the loveliest bit of muffin ever!" Now, I am happy. I tried it using morsels of chocolate instead and it worked beautifully. It's got such a lovely golden colour and has a meltingly beautiful mushing together of banana and chocolate...mmm good.

Yummy and so easy to make. I used Cadbury giant chocolate buttons that I crushed up. Perfect.

I have cooked these A LOT! Everybody loves them- i've put anything from 3-5 bananas in- it always works! Best left for a few days in my opinion to get really moist. Never been able to find butterscoth drops like so many of you but i always put in milk dark and white choc all smashed up-yummy!

Although the butterscotch morsels were quite difficult to source, I'm so happy I persisted as these are quite the loveliest muffins I've ever tasted. These are my 6-year-old son's favourite school snack. Brilliant!
