INSTANT CHOCOLATE MOUSSE
NIGELLA

Photograph by Lis Parsons

INGREDIENTS

150g mini marshmallows
50g soft butter
250g good dark chocolate (minimum 70% cocoa solids), chopped into small pieces
60ml hot water from a recently boiled kettle
1 x 284ml tub double cream
1 teaspoon vanilla extract
Serving Size : Serves 4–6
INTRODUCTION

When you haven't got time for overnight setting in the fridge or you don't want to use raw eggs, this mousse is perfect. In fact, at all times, constraints or not, it is chocaliciously gorgeous.
METHOD

1.Put the marshmallows, butter, chocolate and water in a heavy-based saucepan.
2.Put the saucepan on the hob, over heat, though keep it fairly gentle, to melt the contents, stirring every now and again. Remove from the heat.
3.Meanwhile, whip the cream with the vanilla extract until thick, and then fold into the cooling chocolate mixture until you have a smooth, cohesive mixture.
4.Pour or scrape into 4 glasses or ramekins, about 175ml each in capacity, or 6 smaller (125ml) ones, and chill until you want to eat. The sooner the better!

CAN ANYONE PLEASE HELP ME! When I made this recipe, i had a few problems: 1. The almost cooled chocolate mixture had become clumpy because of the marshmallows cooling 2. When I added the chocolate mixture to the cream, the cream didn't remain as creamy (like Nigella's did). what should i do please help me

This is fabulous and great for pregnant women because of no raw eggs! And if you aren't spot on with the amount of chocolate or marshmallows it so doesn't matter! As for the choc mixture I like to make sure the marshmallows are melted before setting aside to cool, and I find even though some residue heat can seem to deflate the cream it still sets fantastically once in the fridge! And i found frozen raspberries straight from freezer to tumble onto the mousse is lovely!

I love this chocolate mousse and have made it several times. Great as a standby pudding if you keep all the ingredients in the house.

Is it possible to use margarine or clarified butter in place of butter?

This recipe looks really yummy and scrumptious because I love cooking as I am called cookingprincess13. Anyway I am really thinking of making my own recipe book and adding it to my favourites. I might make it one day for my family and me it might be hard for a 13 year old with her 39 year old mum so better start making asap because I think it will turn out really lucky and yummy. I am a real cooking addict even though I don't even cook that much. Anyway our mum (well when I mean our I mean me and my 2 brothers and 2 cats!)) she said that in the coming months we are going to take turns to make dinner and I thought of making garden chicken with vegetables and noodles and for dessert this dessert just to see how it turns out. Make sure you sumbit back to my message or review please so I know if it is a good thing to do for a 13 year old girl. Your Cookingly, cookingprincess13.

Nigella, I live in Brazil, and here, it's so hard to find good dark choco, and when we do, it is so expensive. Can we use instead dark chocolate semisweet chocolate? And if yes, can I use less chocolate than 250g? Thanks!

I've made this recipe millions of times and it's sooooo delicious and is a hit every time! I've also accidentally ended up using cappuccino flavored marshmallows out of desperation one time because the normal ones were out of stock... Still just as yummy!! Then I tried mocha, hazelnut, etc, etc... Try it - it's awesome and works every time!

Not only did it work like a charm, it tastes just like a chocolate mousse with all that egg-work!!

I have made this pud twice now and my husband can't get enough. The first time I made it, I made it for a fairly wealthy man who is very used to good food and he said that he has never tasted anything so light and heavenly.... thanks.

Simply Scrumptious, would be great with berries, white chocolate sprinkled on top, with a couple of chocolate wafer sticks put in. Great recipe. 10/10.

This turned out wonderfully for me, I left it set for an entire day and it was just great.

Outstanding!

This was so quick and easy, and it turned out perfectly. Great dinner party pudding - as there's not too much fuss - but it's very impressive.

This was a real success. Made it for the first time for my brothers house warming party. I have never heard so many mmmm's!! I served it in home made chocolate cups and substituted the double cream for Baileys Extra Thick Cream with a hint of Creme Caramel which definately gave it a twist. (if you use this don't whip the cream as it comes thick enough already) Nigella you have upped my culinary prowess no end. Thank you so much xx

SassySara

It IS possible for something to be too delicious! I have a dreadful problem putting this mixture into serving bowls, as I all I really want to do is EAT IT then and there:D Just gorgeous:D

Hi everybody! I have tried this mousse last Christmas and it was really good!!! When you leave it in the fridge chiller for an hour or two it would turned out to be an ice cream like mousse, hmmm so creamy.. Thanks to Nigella my family were so happy they even want some more.

Chachu

This is great! The egg one is impossible to veganise but this is a doddle! Just use non gelatin marshmellows and rice cream and its delish!!!
