FLOURLESS CHOCOLATE BROWNIES WITH HOT
CHOCOLATE SAUCE

INGREDIENTS

225g dark chocolate, 70% cocoa solids
225g butter
2 teaspoons vanilla extract
200g caster sugar
3 eggs, beaten
150g ground almonds
100g chopped walnuts

METHOD

1.Preheat the oven to 170°C/gas mark 3. Melt the chocolate and butter gently over a low heat in a heavy-based saucepan.
2.Take the pan off the heat, mix in the vanilla and sugar, and let it cool a little.
3.Beat the eggs into the pan along with the ground almonds and chopped walnuts. Turn into a 24cm square baking tin or, most sensibly, use a foil one.
4.Bake in the oven for 25–30 minutes, by which time the top will have set but the mixture will still be gooey. Once cooler, cut carefully, four down, four across, into 16 squidgybellied squares.

For me, this has never worked. They always turn out gooey and they don't set at all. I've cooked them longer than 30mins but they're still goey and don't turn out well.

At first I was a little worried that there was too much butter, but once it had cooled, it was lovely and gooey and rich. Was a lovely end to my casual mid-week dinner party. Although I had to tell my boyfriend to take all the remaining brownies to work, otherwise I would have eaten the lot!

Nigella, you really know how to get the best out of a block of chocolate and slab of butter! These are incredible! Love the texture, love the way these juuuust hold together, love them heaps with ice cream or alone. My Three year old son made this recipe with the smallest amount of help from me, they are that easy!
