MEXICAN SCRAMBLED EGGS

INGREDIENTS

2 x 15ml tablespoons vegetable oil
2 soft corn tortillas
1 tomato, deseeded and roughly chopped
1 spring onion, roughly chopped
1 small green chilli, deseeded and chopped
4 eggs, beaten
1/4 teaspoon of Maldon salt or pinch of table salt
Serving Size : Serves 2
METHOD

1.Heat the vegetable oil in a heavy-based frying pan. Roll up the corn tortillas in a sausage shape and then snip them into strips with a pair of scissors straight into the hot oil.
2.Fry the tortilla strips for a few minutes until crisp and golden, and then remove to a bowl.
3.Add the chopped tomato and spring onion to the hot oily pan along with the chopped chilli, turning everything about for a minute or so with a wooden spoon.
4.Put the corn tortilla strips back in the pan, and add the beaten eggs and salt. Using the same spoon, move everything about the pan as you do when scrambling eggs.
5.Once the eggs are setting, remove the pan from the heat, and continue stirring the eggs until they are done to your liking.

What a delightfully easy way to fancy-up breakfast eggs! This is delicious - the crispy tortillas are a wonderful addition, along with the flavours of the tomatoes, chilli and spring onion. It all comes together brilliantly, but nothing overshadows the basis of the dish - eggs. Easy to turn it into a family friendly option by either using milder chilli or just omitting it. YUM.

Love this recipe! It is so quick and easy, takes no time at all and makes a delicious brunch, lunch or supper dish. Lovely with fresh coriander sprinkled on top or a handful of grated mature cheddar added with the eggs.

Despite my own reservations (I am not much of a fan of the eggs/tomato combo), it turned out to be really good and both myself and DH really enjoyed it. I used flour tortillas and red chilli (both out of preference), with a little more chilli than suggested as I like spicy food. Would definitely make this again.

Loved this !! I added some sliced peppadews that gave it an interesting twist. Served with panfried mushrooms and spicy lamb sausages. Crisping up the tortilla's made this dish different and special !!

This is a fantastic dish, can easily be tweaked to suit individual tastes but still retain the authenticity of the original. I doubled up on the onion as my hubby doesn't like chilli and used garlic oil. It will be a firm favourite, especially in summer when looking for a light dinner dish. Tassie.

I think this is a supberb dish for breakfast/brunch and transforms plain scrabbled eggs into something special such a stand by meal when youve got unexpected company which i do and at breakfast times mainly a sunday its just so easy and that kick of heat is just about right for me but Mr D would like a little more which is easy to do

A really yummy recipe that you'd end up making again and again. The corn tortillas add a delightful texture and you can vary the recipe to suit your own tastes and according to the ingredients in your store cupboard:)
