Introduction

I didn't have any walnuts so I substituted Nigella's Banana Loaf recipe with other ingredients I had in my cupboard. Sweeter and extra yummy!

I didn't have any walnuts so I substituted Nigella's Banana Loaf recipe with other ingredients I had in my cupboard. Sweeter and extra yummy!

Ingredients

Makes: 10 -12 slices

Metric Cups
  • 100 grams baby marrows
  • 75 millilitres Amaretto liqueur
  • 175 grams plain flour
  • 2 teaspoons baking powder
  • teaspoon bicarbonate of soda
  • teaspoon salt
  • 125 grams stork margarine
  • 150 grams white sugar
  • 2 medium eggs
  • 3 large bananas
  • 20 grams mini marshmallows
  • 20 grams desiccated coconut
  • 20 grams dark chocolate chips
  • 1 teaspoon vanilla extract
  • 3½ ounces baby marrows
  • 3 fluid ounces Amaretto liqueur
  • 6⅙ ounces all-purpose flour
  • 2 teaspoons baking powder
  • teaspoon baking soda
  • teaspoon salt
  • 4⅖ ounces stork margarine
  • 5⅓ ounces granulated sugar
  • 2 medium eggs
  • 3 large bananas
  • ¾ ounce mini marshmallows
  • ¾ ounce unsweetened shredded coconut
  • ¾ ounce bittersweet chocolate chips
  • 1 teaspoon vanilla extract

Method

Banana Loaf is a community recipe submitted by banannas and has not been tested by Nigella.com so we are not able to answer questions regarding this recipe.

  • Use same method as Nigella suggests but just substitute the ingredients. Tastes sweeter and gives a good texture. Keep oven at 140 degrees for fan oven. Speeds up baking time by 15 mins.
  • I use this recipe practically every week for Mother and Toddler Groups. It's filling but not in a sickly way, more healthy with the bananas and raisins. I have 3 boys and they love it after school when they are starving to fill that gap before dinner time. A great way of using up bananas and other odds and ends that need finishing in the baking cupboard.
