What does this mean?

I disocvered this recipe by accident whilst dabbling in the kitchen one day. It's fairly simple and hopefully anyone can add or change as they see fit, as I would never claim perfection... well, not just yet :) Enjoy x

Ingredients

Switch to Cup Measures
  • 8 medium pork ribs (or pork butts)
  • 250 ml water (for cooking with ribs)
  • 2 medium red onions (diced)
  • 1 teaspoon garlic (finely chopped)
  • 1 tablespoon Marmite (heaped)
  • 250 ml soft brown sugar
  • 4 tablespoons honey (mmmmm... honey)
  • 3 tablespoons tomato sauce (any brand)
  • 250 ml cider vinegar
  • 1 teaspoon chilli sauce (med-hot)
  • 125 ml Jack Daniels

Method

  1. Place the pork into a pressure cooker with seasoning and approx ½ cup of water and cook for 20 minutes, or until cooked.
  2. Sweat the onions in a saucepan with a spoonful of olive oil until soft.
  3. Once softened, add the remaining ingredients into the saucepan and bring to the boil.  Simmer 45 minutes until the sauce starts to thicken.
  4. Once the ribs are tender, transfer into a deep baking tray and pour over the sauce.
  5. Bake in the oven for 20 minutes until the sauce becomes sticky. 
  6. Serve on a large plate in the centre of the table or as part of a main dish.

Tips and tricks

  1. Alternatively if you do not have a pressure cooker to cook the ribs, bake slowly in the oven at a low heat until they are cooked through.  
  2. Or sear meat and place into a slow cooker with the sauce for 4 hours, finishing off in the oven if necessary. (Monitor the water content and add a little at a time if the sauce starts to dry any)
  3. Be prepared for a little wait for these two methods though as the ribs are best cooked slowly x
