Ingredients
Switch to Cup Measures- 2 large parsnips (peeled)
- 1 teaspoon mustard seeds
- groundnut oil (a drizzle, optional)
- 10 grams butter
- ½ teaspoon paprika
- 1 pinch of celery salt
- 0.35 litres chicken stock (I prefer chicken oxo cubes)
- 40 grams mascarpone cheese
Method
- Peel and chop parsnips into even size pieces and steam til soft. Combine with other ingredients til creamy.
- Season to taste serve piping hot with fresh rustic bread. You can really play with this recipe for different flavours.
