Introduction

These cakes were supposed to be biscuits but turned out more like bread like cakes... Thankfully, they taste really good, so that's an upside!!! This is a quick and easy recipe and doesn't require many ingredients. I got this recipe a while ago from the website 'eHow Food', adapting it of course as their recipe was quite bland. Happy baking!

Ingredients

Metric Cups
  • 220 grams flour
  • 3½ teaspoons cinnamon
  • 2 teaspoons ground ginger
  • 3 teaspoons baking powder
  • 71 millilitres vegetable oil
  • 142 millilitres milk
  • 1 teaspoon vanilla essence
  • 7¾ ounces flour
  • 3½ teaspoons cinnamon

  • 2 fluid ounces vegetable oil
  • 5 fluid ounces milk
  • 1 teaspoon vanilla essence

Method

  • Preheat the oven at 230 degrees celsius (450 degrees fahrenheit)
  • Sift the flour into a weighing bowl (scales, e.t.c) and then sift through again into a large mixing bowl with the cinnamon, ginger and baking powder.
  • Add the vegetable oil, milk and vanilla essence to the dry ingredients and mix in well.
  • Add some more milk if the dough is too dry and add some more flour is it is too sticky. The dough should feel slightly sticky but not stick to your fingers when held.
  • Place the biscuits on a lightly floured surface and roll or pat them to a width of 1cm. Cut out circles with a floured cutter and place on a non greased baking tray. Bake for 10 minutes or until golden and hard. Cool for 10 minutes.
