Ingredients

  • 1 cup jumbo rolled oats
  • 1 cup all-purpose flour
  • ¾ cup superfine sugar
  • ½ cup desiccated coconut
  • 4 oz butter
  • 1 tablespoon corn syrup
  • 1 tablespoon boiling water

Method

  1. Combine dry ingredients in a bowl.
  2. Melt butter and corn syrup together over a low heat. Mix soda with boiling water, then stir into butter/syrup mix. Stir wet ingredients into dry. Take two teaspoonfuls of mix (about walnut size) and place on greased trays. Leave a few centimetres between each.
  3. Cook in slow oven, 150 degrees, for about 15-20 minutes.
  4. The biscuits should be firming up around the edges, but still slightly soft in the middle. Loosen them while still warm, but leave to cool on the trays.
