  • 1 medium grapefruit
  • 2 large avocados (ripe)
  • 2 handfuls kalamata olives (black olives)
  • 113 grams mozzarella or feta
  • radicchio or lettuce leaves

Method

  • Peel the grapefruit, divide and remove membrane.
  • Thinly slice avocado lengthways.
  • Chop cheese into small pieces.
  • Mix grapefruit, avocado, olives and cheese.
  • Serve on a bed of lettuce. Add any dressing. I recommend balsamic vinegar. (Eat before the avocado discolours).
