A fresh starter to accompany any main meal. Very little dressing needed as it is already very flavoursome!

Ingredients
Switch to Cup Measures- 1 medium grapefruit
- 2 large avocados (ripe)
- 2 handfuls Kalamata olives (black olives)
- 113 grams mozzarella or feta
- radicchio or lettuce leaves
Method
- Peel the grapefruit, divide and remove membrane.
- Thinly slice avocado lengthways.
- Chop cheese into small pieces.
- Mix grapefruit, avocado, olives and cheese.
- Serve on a bed of lettuce. Add any dressing. I recommend balsamic vinegar. (Eat before the avocado discolours).
