Ingredients

Switch to Cup Measures
  • 4 bananas (peeled, cut in chunks and spritzed in lemon juice)
  • 1 lemon juice
  • 4 eggs
  • 80 grams caster sugar
  • 20 ml coconut milk
  • 40 grams butter (in small pieces)
  • 50 grams coconut (to taste, grated - can use ground almonds)
  • 1 teaspoon cinnamon (optional)

Method

  1. Preheat the oven on 180°C.
  2. Mix all ingredients together in the processor and pour into buttered individual ramekins or a larger ovenproof dish.
  3. Pour hot water onto a baking tray and put your dish on it. Bake for 30-40 mins until firm and golden.
  4. Eat warm or cold. You could decorate the surface with slices of bananas before it goes into the oven.
