Ingredients

  • 2 cups flour
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 2 tablespoons superfine sugar
  • 1 egg
  • 1 cup milk
  • ¼ cup melted butter

Method

  1. Pre heat to 375degrees-
  2. Mix flour, baking powder, salt and sugar in bowl. Add a slightly beaten egg, milk and butter, stirring only enough to dampen the flour, the batter should not be smooth.
  3. Spoon into muffin cases and bake for 20- 25 mins.
  4. For Choc. chip muffins i add a couple of packs to batter.
  5. Blueberry muffins use half cup sugar. Reserve quarter cup of the flour and sprinkle over blueberries and stir into batter last.
  6. Wholewheat muffins- use 3/4 cup wholewheat flour and 1 cup white flour.
  7. Date or raisin muffins add 1/2 cup chopped dates or 1/3rd cup raisins to batter.
