Metric Cups

For the Beef Skewers

  • 500 grams beef rump
  • 1½ tablespoons red wine vinegar (or balsamic)
  • 2 tablespoons horseradish sauce
  • 1 tablespoon fresh rosemary (finely chopped)
  • 60 millilitres olive oil
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons port

For the Horseradish Dip

  • 200 millilitres creme fraiche
  • 4 tablespoons horseradish sauce
  • 1 tablespoon Dijon mustard

For the Beef Skewers

  • 17⅔ ounces beef rump
  • 1½ tablespoons red wine vinegar (or balsamic)
  • 2 tablespoons horseradish sauce
  • 1 tablespoon fresh rosemary (finely chopped)
  • 2 fluid ounces olive oil
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons port

For the Horseradish Dip

  • 7 fluid ounces creme fraiche
  • 4 tablespoons horseradish sauce
  • 1 tablespoon dijon mustard

Method

Beef Skewers With Horseradish Dip is a community recipe submitted by Kyles and has not been tested by Nigella.com so we are not able to answer questions regarding this recipe.

  • Cut the beef into 2.5cm cubes, and put into a freezer bag with all of the other ingredients.
  • Leave overnight in the fridge. Let the meat come to room temperature, and soak about 10 bamboo skewers in water for about half an hour.
  • Heat a grill or griddle, then thread three or four pieces of meat onto each skewer and slap on the heat.
  • Cook the skewers for about 3 minutes a side, or to taste. To make the dip, whisk together all of the ingredients, and put into a bowl to serve with the beef skewers.
