Ingredients

Switch to Cup Measures

For the salad

  • 4 large beetroots (peeled)
  • 2 eggs (hard boiled)
  • 200 grams feta cheese
  • 1 Mesclun salad leaves

For the dressing

  • 1 lemon (juice)
  • 1 teaspoon Dijon mustard
  • 1 clove garlic (pressed)
  • 1 salt (to taste)
  • 50 ml extra virgin olive oil

Method

  1. Toss beetroots with olive oil and salt.
  2. Put them in an ovenproof dish with tin foil over
  3. Bake in a 200 C warm oven about 40-50 mins. Let cool a little, cut in half and put on a plate together with cubed feta, chopped egg and salad leaves.
  4. Serve with dressing from beetroot salad 1.
