This is a really nice thing to served as a starter. I made it to go with pate and ciabatta. Don't be put off if you haven't got an ice cream machine. Made as a granita, it's just as usable.

Ingredients

Serves: 6-8

Metric Cups
  • 6 oranges (juice and zest)
  • 1 lime (juice and zest)
  • 2 tablespoons cointreau (or triple sec)
  • ¼ teaspoon dried chilli flakes
  • ¼ teaspoon cardamom pods
  • ¼ teaspoon black peppercorns
  • ¼ teaspoon coriander seeds
  • 6 oranges (juice and zest)
  • 1 lime (juice and zest)
  • 2 tablespoons cointreau (or triple sec)
  • ¼ teaspoon red pepper flakes
  • ¼ teaspoon cardamom pods
  • ¼ teaspoon black peppercorns
  • ¼ teaspoon coriander seeds

Method

  • Mix all the ingredients (except the liquor) and bring them to the boil. Let them simmer for an hour with covered lid.
  • Let it cool and put it through a strainer. Add the liquor and put the mix in the fridge.
  • When it's chilled: put it in a ice cream machine according to the instructions to turn it into a sorbet or in put it in the freezer to make a granita (stir it every now and then to brake the crystals). Served in shot glasses, it's enough for 6 to 8 people.
