Introduction

Throw away the scales for this one! My own concoction, born out of an 'oh dear that's all there is in the fridge' moment. It's not an exact science, and you don't need very much of it, but dripping over fresh taglietelli it's the absolute mutt's! Comfort food ahoy... Makes about 4 servings and freezes well too.

Ingredients

Serves: 4

Metric Cups
  • 1 tub single cream (large tub)
  • 150 grams creamy blue cheese (Bleu D'Auvergne)
  • 5 rashers smokey bacon
  • 1 tub heavy cream (large tub)
  • 5⅓ ounces creamy blue cheese (Bleu D'Auvergne)
  • 5 rashers smokey bacon

Method

  • Remove any rind and fat from the bacon. Cut up into small lardons and fry off. Put to one side.
  • Pour all the cream into a non-stick pan and heat over a gentle to medium heat until beginning to bubble, stirring occasionally.
  • Add the cheese (cut into small cubes) and stir until almost melted.
  • Add the bacon, and keep stirring while it all thickens a little.
  • Spoon just three or four tablespoons over fresh tagliatelli, and sit back for to enjoy food heaven!

    • This is going on my burgers this weekend. A whole cow turned into hamburger, I have a little ground pork added to mine. Chopped morel mushrooms and some onion and a prettzyl roll

    • A brilliant and easy recipe. My husband loves this and it is put together in the matter of just minutes. My husband requests this as a special treat and does not realise how easy it is (I am keeping that information to myself so that he thinks I have put in a lot of effort to produce one of his favorite dishes).
