BUTTERMILK FRUIT LOAF
My mother always makes this and it has to be my favourite cake that she made when I was younger (and now).

Ingredients
- 250g self-raising flour
- 125g plain flour
- 1 tsp ground cinnamon
- 1/4 tsp grated nutmeg
- 1/4 tsp salt
- 225g mixed dried fruit
- 375ml buttermilk
- 1 egg
- 3 tbsp honey
- 4 tbsp caster sugar
- 100ml oil
Method
Serves: a loaf
- Preheat oven 175°c. Sift flour, spices and salt together.
- Mix in fruit. Whisk buttermilk, egg, honey, sugar and oil together. Add to flour mix and combine lightly but thoroughly.
- Turn into a base-lined and oiled loaf tin and level top with back of a spoon dipped into hot water. Arrange almonds on top.
- Bake on middle shelf of oven for an hour but at 45 minutes turn it around so it doesn't get too brown on one side. Stand for 1 minute before turning it out onto a rack and removing the paper. Leave to cool before slicing.
