BUTTERMILK FRUIT LOAF

My mother always makes this and it has to be my favourite cake that she made when I was younger (and now).

Ingredients

  • 250g self-raising flour
  • 125g plain flour
  • 1 tsp ground cinnamon
  • 1/4 tsp grated nutmeg
  • 1/4 tsp salt
  • 225g mixed dried fruit
  • 375ml buttermilk
  • 1 egg
  • 3 tbsp honey
  • 4 tbsp caster sugar
  • 100ml oil

Method

  1. Preheat oven 175°c. Sift flour, spices and salt together.
  2. Mix in fruit. Whisk buttermilk, egg, honey, sugar and oil together. Add to flour mix and combine lightly but thoroughly.
  3. Turn into a base-lined and oiled loaf tin and level top with back of a spoon dipped into hot water. Arrange almonds on top.
  4. Bake on middle shelf of oven for an hour but at 45 minutes turn it around so it doesn't get too brown on one side. Stand for 1 minute before turning it out onto a rack and removing the paper. Leave to cool before slicing.
