Introduction

In Forever Summer (from which this and the following recipes are all adapted) I unveiled my version of a Caesar Cleopatra which is (as I learnt from a visit to the food court of a Los Angeles shopping mall) what a Caesar salad with chicken is properly called, however improper you might find the innovation. Given the magisterial greatness of the turkey, I have renamed my leftover version a Caesar Augustus. I like to add avocado, but if you don't have one to hand I wouldn't lose sleep over it. Ingredients

Serves: 2

Metric Cups
  • 2 cos lettuce (hearts)
  • 1 egg yolk
  • 3 tablespoons extra virgin olive oil
  • 1 lemon (juiced)
  • 2 drops Worcestershire sauce
  • 3 tablespoons grated Parmesan
  • 200 grams turkey breast (cold, shredded)
  • ½ avocado (optional)
  • 2 romaine lettuce (hearts)
  • 1 egg yolk
  • 3 tablespoons extra virgin olive oil
  • 1 lemon (juiced)
  • 2 drops Worcestershire sauce
  • 3 tablespoons grated Parmesan
  • 7 ounces turkey breast (cold, shredded)
  • ½ avocado (optional)

Method

Caesar Augustus is a community recipe submitted by jml and has not been tested by Nigella.com so we are not able to answer questions regarding this recipe.

  • Tear the lettuce into large chunks and arrange on a plate.
  • Mix up the dressing by whisking the egg yolk in a bowl and carry on whisking as you add the oil slowly. Whisk again, adding the lemon juice and Worcestershire sauce.
  • Pour this dressing over the lettuce, then toss well, preferably with your hands, so that all the leaves are coated. Sprinkle over two tablespoons of the parmesan and toss again. Add the turkey bits to the salad, along with the sliced avocado half, if you're using it.
  • Toss once more, then sprinkle over the final tablespoon of parmesan.
