Introduction

A deliciously, sweet cake/slice for those who love caramel!

Ingredients

Serves: 12 slices

For the Caramel Filling

  • 1¾ ounces butter
  • ½ cup sweetened condensed milk
  • 1 teaspoon golden syrup or light corn syrup
  • 1 teaspoon vanilla essence

For the Cake Mix

  • 4 ounces butter
  • 1 cup whole wheat flour
  • 1½ cups quick-cooking oats
  • ½ cup unsweetened shredded coconut
  • 1 cup soft brown sugar
  • 1 teaspoon baking powder
  • 1 tablespoon baking soda
  • 1 egg
  • 1 tablespoon coffee essence (or instant coffee mixed with hot water)
  • 1 teaspoon vanilla essence

Method

  • Preheat oven to 180c & grease a 20cm springform round cake tin.
  • Melt together the caramel ingriedients in the microwave for about 1m 40secs & stir. In a bowl mix the WM flour with the oats, coconut, Brown sugar & sifted soda & baking powder together.
  • Melt the extra 125g butter & mix with the egg, coffee flavour & vanilla essence. Mix the two together to form your cake/slice mix.
  • Press half the cake mix into your prepared tin then pour over the caramel & finally crumble the remaining cake mix on top. Dont worry if it doesnt cover all of the caramel as the cake mix spreads as it cooks.
  • Bake for 10mins on the top shelf then for another 10mins on the lower shelf of your oven.
  • Cool & cut into 12 slices then serve with whipped cream on the side.
