Serves: a jar

  • 3 medium carrots
  • 2500 millilitres water
  • 4 large lemons
  • 2 kilograms caster sugar

Method

  • Grate carrots. Slice lemons very finely. Cover with water and leave overnight.
  • Then boil the mixture for 1 hour, add the sugar and boil again for 1 hour or until it has reached setting point. Bottle and seal.
