Introduction

Sandwich filling For use on toast. From an old Cordon Bleu course. I used this recipe and the potted cheese very often.

Ingredients

Serves: 1

  • 6 ounces mature cheddar
  • 3 ounces butter
  • 1 milk
  • mixed chopped herbs
  • salt
  • pepper

Method

  • Grate cheese.
  • Cream butter well in basin, then work in the cheese gradually. When the mixture becomes stiff, add the hot milk and continue until it is light and creamy.
  • Add herbs to taste or leave plain. Season well with salt and pepper.
  • Serve with toast or as a sandwich filling.
