Ingredients

Serves: 4

Metric Cups
  • 250 grams minced beef (lean)
  • 150 grams carrots
  • 1 small onion
  • 1 small egg
  • 40 grams cheese (cubed)
  • 9 ounces ground beef (lean)
  • 5 ounces carrots
  • 1 small onion
  • 1 small egg
  • 1 ounce cheese (cubed)

Method

  • Pre heat oven to 200/gasmark 4.
  • Grate the carrots, not on the finest blade, they make a nice crunch. Very finely chop your onion.
  • Mix the beef, onion and grated carrot in a bowl and maybe a little black pepper. Add enough beaten egg to bind.
  • Mould into 8 rough balls. You will find this gives you generous sized meatballs.
  • Push a cube of cheese into each one and firmly mould the meat around it. You might like to see the size of the meatballs before you cut your cheese, otherwise its tricky to judge.
  • Place on a baking tray and bake for 20 minutes, until firm and brown.
