Introduction

This recipe was my late mother's and I look forward to cherry season every year to recreate it. Beautiful ripe cherries are flooding in to the farmers market in New York city at the moment so it;s time for this delicious dessert

Ingredients

Serves: 4-6

  • ½ cup all-purpose flour
  • ¼ teaspoon salt
  • 2 large eggs
  • 2 tablespoons granulated sugar
  • ¾ cup cream
  • ½ teaspoon vanilla
  • ½ cherries (pitted)
  • 1 tablespoon unsalted butter
  • 2 tablespoons granulated sugar

  • Turn oven to 425 degrees
  • Beat together first 6 ingredients to make a batter Melt 1tbsp butter in an 8" skillet and add the cherries, cook for 2-3 minutes and then sprinkle with 2tbsps granulated sugar and stir together for 2-3 minutes until a syrup has formed
  • pour batter over cherries and bake for 20-25 minutes until puffed and golden Enjoy with cream or icecream.
