Cheryl's Slice

Introduction

This is a very simple slice recipe which my mother has been making for afternoon teas ever since I can remember! She got the recipe from my Godmother - Cheryl, hence it is known as 'Cheryl's Slice' in our household. It's ridiculously quick and easy and keeps well.

Ingredients

Serves: 12

  • 4 ounces nuttelex
  • 1 tablespoon golden syrup or light corn syrup
  • 1 cup quick-cooking oats
  • 1 cup mixed dried fruit
  • ½ cup self-rising flour
  • ½ cup unsweetened shredded coconut
  • ½ cup sugar

Method

  • Melt the Butter and golden syrup or light corn syrup together in the microwave. Then add all other ingredients and stir together well.
  • Press mixture into a pyrex dish or baking tin and bake for about 1/2 an hour on 180 C.
  • Leave for 10 minutes and then cut into squares while still warm.
  • Additional Information

    You can make a dairy-free version by using Nuttelex, but it won't be quite as good!
