  • 1 chicken breast
  • 200 grams full fat soft goat's cheese
  • fresh basil
  • spring onions
  • fresh coriander
  • cayenne pepper
  • 800 grams carrots
  • 800 grams potatoes
  • 1 chicken breast
  • 7 ounces full fat soft goat's cheese

  • 28¼ ounces potatoes

Method

Chicken-Goat Cheese With Carrot 'Stoemp' is a community recipe submitted by pickleweezle and has not been tested by Nigella.com so we are not able to answer questions regarding this recipe.

  • pre-Heat the oven to about 200°C. Cut your chicken breast in two, so you have one per person. Then cut it in the length so you get a pocket.
  • Fill this with a lot of goat's cheese and fresh herbs. Close the pocket and sprinkle the chicken with cayenne. Then put in the oven until cooked (about 20 minutes).
  • For the carrot-stoemp you cook the carrots until they are soft and cook the potatoes until ready. Don't peel either of them! When they're both ready put them together and mash them, but not too smoothly. Add salt and pepper and a lot of fresh coriander. That's all!
