Introduction

This is a simple baked chicken that requires some basic prep work, everything thrown in a baking dish and then forgetting about it for an hour. It requires no skill in the kitchen whatsoever. I came up with it when I was in a ratatouille phase and couldn't stop buying peppers and tomato.

  • 8 chicken pieces
  • 1 red pepper (sliced and seeded)
  • 1 green pepper (sliced and seeded)
  • 1 yellow pepper (sliced and seeded)
  • 1 tin chopped tomatoes
  • 4 cloves garlic (peeled and sliced)
  • 250 millilitres dry white wine
  • bay leaves
  • 2 onions (sliced)
  • courgettes
  • salt
  • pepper
