Introduction

I played around with this after seeing a basic chicken breast with Parma ham on Come Dine With Me during the first series. It is very quick to make and tastes very satisfying.

Ingredients

Serves: 1.

Metric Cups
  • 1 chicken breast
  • 2 rashers parma ham (or dry cure streaky)
  • 1 pinch of fresh sage (finely chopped)
  • olive oil
  • 1 pinch of fresh oregano (finely chopped)
  • 1 pinch of fresh thyme (finely chopped)
  • 1 chicken breast

Method

  • Preheat oven to 190C/gas 5
  • Lightly grease a small tin with olive oil
  • Lightly grease the chicken with a touch of oil then roll it in the tsp herbs
  • Wrap the rashers round the breast
  • Place on tin and roast on middle shelf of oven for 25 min.
  • Check chicken is cooked through and the bacon crisp.

    This can be served with a range of stuff. I like freshly made cranberry relish, Schwartz gravy with added sage (cheat), boiled baby new potatoes (small as poss) and green veg and maybe an Aunt Bessie Yorkshire for that ersatz Sunday dinner feel.
