Chickpea Salad

Introduction

I find chickpeas an easy and less expensive way of filling you up. Chickpeas are a miracle food that can be made into hummus, couscous, anything! - I love it. This salad is amazing, light and filling when you are on the go. Make this up before hand and you have a lunch time salad that is better than going to the canteen or cafeteria...and we all know how crap that stuff is normally. This salad goes great with fish, meat, other salads - it's perfect. I was on a roll when I made this. After a few trial and errors with mixed beans variations, I found it simpler, tastier and cheaper to do this. Enjoy!

Ingredients

Serves: 4

Metric Cups
  • 1 can chickpeas
  • ½ red onion (diced small)
  • ½ red pepper (diced small)
  • ½ yellow pepper (diced small)
  • 1 small carrot
  • 1 bunch fresh coriander
  • 1 pinch of sea salt
  • 1 pinch of cracked black pepper
  • 3 tablespoons olive oil
  • 3 tablespoons vinegar
  • 1 can garbanzo beans
  • ½ red onion (diced small)
  • ½ red bell pepper (diced small)
  • ½ yellow bell pepper (diced small)
  • 1 small carrot
  • 1 bunch cilantro
  • 1 pinch of sea salt
  • 1 pinch of cracked black pepper
  • 3 tablespoons olive oil
  • 3 tablespoons vinegar

Method

  • Drain the chickpeas and rinse. Set aside till ready. Dice the red and yellow peppers and put in large mixing bowl. Do the same with the red onion.
  • Peel the carrot to get off the outer layer of skin and shave the carrot in small strokes into the mixing bowl. When you have the desire amount, I would just nibble on whats left of the carrot. Waste not, want not.
  • Take the bundle of coriander and try to fold it over onto itself until its a tight little ball. With a sharp paring knife, chop the coriander - You will notice it fall away into nice little shards and shreds.
  • Dump this into the bowl too. Toss in the drained chickpeas. Add your salt and pepper along with your olive oil and vinegar. Mix together and chill. Enjoy with Lamb burgers and hummus.
