Chocolate Chip Macadamia Cookies

Introduction

This recipe became an overnight success in my family. I remember making a batch every 2 days for a while, then doubling the mixture in the twisted belief (despite the fact I LOVE baking) that I was going to save myself time in the kitchen.... not to be. Thankfully it is now a 'Christmas Time Must' along with the other various Chrissy treats!

Ingredients

Serves: 24

  • 1 cup all-purpose flour
  • ¼ teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup quick-cooking oats
  • 4 ounces softened unsalted butter
  • ½ cup brown sugar
  • 1 medium egg
  • ½ teaspoon vanilla essence
  • 1 cup bittersweet chocolate chips
  • ½ cup chopped macadamia nuts

Method

  • Preheat oven to 180C or about 150C fanforced oven.
  • Cream butter & sugar till light & fluffy. Beat in egg & vanilla (I always give the egg a quick beat with a fork to break it up a little.)
  • In another bowl sift together flour, baking powder, bicarb soda & salt & stir in oats. Fold the flour & oat mix into the butter & sugar mix. Fold in the choclate chips & nuts.
  • Using rounded tablespoons, drop dough 5cm apart onto greased baking trays. Bake cookies for 12-15 minutes or until golden.
  • Cool for 5 minutes then transfer to wire racks.
  • Additional Information

    Always feel free to add a few more chocolate chips (can never have too much of a good thing). There is nothing better than tucking into these while they are still warm, especially when you hit a chocolate chip vein. I have also swapped the macadamia nuts with hazelnuts but there is something a little more delicious about biting into that buttery macadamia combined with the warm chocolate.

    Should make about 24 cookies.
