This is one of my regular cakes, I make it about once a month. It's lovely and moist and great with a splash of cream.

Ingredients

Serves: 8 - 10 slices

Metric Cups
  • 150 grams butter
  • 150 grams light brown muscovado sugar
  • 150 grams plain chocolate
  • 2 medium bananas
  • 3 medium eggs (beaten)
  • 200 grams plain flour
  • 2 teaspoons baking powder
  • 5⅓ ounces butter
  • 5⅓ ounces light brown sugar
  • 5⅓ ounces plain chocolate
  • 2 medium bananas
  • 3 medium eggs (beaten)
  • 7 ounces all-purpose flour
  • 2 teaspoons baking powder

Method

  • Preheat over to 150c/300f/Gas
  • Grease a 900g loaf tin and line with grease proof paper
  • In a medium non-stick pan, gently heat the butter, sugar and chocolate until melted.
  • Stir well and remove from the heat. Add the banana and eggs, then sift in the flour and baking powder. Mix to a smooth, thick batter.
  • Pour the mixture into the prepared tin. Bake for 1 hour until the cake has risen and feels firm in the centre when light pressed with your fingertips.
  • Remove from the oven and cool in the tin then turn out on to a wire rack to cool completely
