CHRISTMAS JAM

Cranberry jam taken to the next level.

Ingredients

  • 225g cranberries
  • 225g sugar
  • seeds of one pomegranate
  • zest of an orange
  • 1 tablespoon class"A" (topshelf) liquor of your choice

Method

  1. Heat the cranberries and sugar over medium heat until the sugar dissolves and the cranberries just begin to pop.
  2. Add the remaining ingredients and cook for a scant minute longer. You don't want to make cranberry sauce, just an amalgamation.
  3. Take off the heat and put into sterilized jars, or spread over Christmas morning muffins. Also nice as a Pavlova topping.
