This is adapted from my grandmas recipe, feel free to use canned tomatoes, I've found that the taste is not too different, and it helps if you don't have that much time. The amounts of potato, bacon, and onion are really just a guide, if you want a more filling soup, add more, and if you're looking for something lighter add less. NB. If stored for an extended period, the potato can go mushy and mix in with the soup, and it will taste slightly different.
