Ingredients
Switch to Cup Measures- 200 grams butter (soft)
- 200 grams white sugar
- 2 medium eggs
- 1 teaspoon vanilla extract
- 200 grams coconut milk
- 4 medium egg whites
- 1 pinch of salt
- 100 grams brown sugar
- 4 tablespoons coconut (grated)
- 440 grams cake flour
- 1 teaspoon baking powder
- granola (for topping)
Method
- Preheat oven to 180°C.
- Beat soft butter with white sugar until creamy. Add 2 eggs, vanilla and beat a little more. Add the coconut milk, little by little while you beat until you obtain an even batter. Set aside.
- Beat the 4 egg whites with a pinch of salt and the brown sugar until you obtain a meringue.
- Mix the meringue into the previous batter, softly until preparation is smooth.
- Last but not least, mix in the grated coconut, the flower and the baking powder gently.
- Pour batter into muffin moulds and top each one with a bit of granola. Bake for 25-30 minutes to 180°C. Enjoy!!!
