Ingredients

Metric Cups
  • 200 grams butter (soft)
  • 200 grams white sugar
  • 2 medium eggs
  • 1 teaspoon vanilla extract
  • 200 grams coconut milk
  • 4 medium egg whites
  • 1 pinch of salt
  • 100 grams brown sugar
  • 4 tablespoons coconut (grated)
  • 440 grams cake flour
  • 1 teaspoon baking powder
  • granola (for topping)
  • 7 ounces butter (soft)
  • 7 ounces granulated sugar
  • 2 medium eggs
  • 1 teaspoon vanilla extract
  • 7 ounces coconut milk
  • 4 medium egg whites
  • 1 pinch of salt
  • 4 ounces brown sugar
  • 4 tablespoons coconut (grated)
  • 16 ounces cake flour
  • 1 teaspoon baking powder
  • granola (for topping)

Method

  • Preheat oven to 180°C.
  • Beat soft butter with white sugar until creamy. Add 2 eggs, vanilla and beat a little more. Add the coconut milk, little by little while you beat until you obtain an even batter. Set aside.
  • Beat the 4 egg whites with a pinch of salt and the brown sugar until you obtain a meringue.
  • Mix the meringue into the previous batter, softly until preparation is smooth.
  • Last but not least, mix in the grated coconut, the flower and the baking powder gently.
  • Pour batter into muffin moulds and top each one with a bit of granola. Bake for 25-30 minutes to 180°C. Enjoy!!!
