CRANBERRY AND ORANGE BISCOTTI

Have one for breakfast with a cup of tea in bleak January and be transported to an Italian Christmas. These are magic in a biscuit tin!

Ingredients

  • 100 g soft butter
  • 130 g sugar
  • 2 eggs
  • pinch of salt
  • 1 teaspoon vanilla extract .
  • 1 tablespoon finely grated orange zest
  • 2 tablespoons freshly squeezed orange juice
  • 450 g flour
  • 2 teaspoons baking powder
  • 1 cup dried cranberries
  • 1 cup pine nuts

Method

  1. Put the oven at 175 C. Cream the butter and sugar until pale. Add eggs, salt, vanilla, orange zest and juice, and combine. Add flour and baking powder. Stir in the cranberries and pine nuts.
  2. Shape the dough into a log, and bake for 30 - 35 minutes. Let cool for about 15 minutes. Cut the log into pieces, and put on the baking sheet, cut side up.
  3. Bake for 10 minutes more. Enjoy the smell wafting through the house and pretend you're Sophia Loren.
