Crunchy Baked Banana

Introduction

Easy to make...and yummy too, when I saw this recipe in a health mag I thought it'll be awful...but when I had to cut down on my dad's sweet intake I thought I'll go for this.....and it tastes pretty good too.

Ingredients

Serves: 2-3

  • 5 bananas (sliced in half)
  • ½ cup sugar-free muesli
  • ½ cup honey
  • natural yogurt (or ice cream)

Method

  • Pour the honey onto a plate, dip each slice of banana into this. Roll the banana on the cornflakes and muesli so that it sticks firmly onto the banana slice (don't press too firmly, or you'll end up squashing the banana).
  • Place on a greased baling tray and bake at 150 degrees for about 5-10 mins. Remove from oven and serve hot with chilled yoghurt or ice-cream.
  • Additional Information

    I've also tried another variation, i.e; place the banana slice on the baking tray sprinkle sugar on each slice, then squirt half a lemon's juice over the banana slices and bake at 150 degrees for 5-10 mins till the sugar is caramelised. Serve hot with whipped cream or ice cream.
