For the cake

  • 2 eggs
  • 100 grams butter
  • 15 grams sugar
  • 100 grams flour
  • 2 tablespoons cocoa powder

For the dusting

  • 1 tablespoon icing sugar

Method

  1. Preheat the oven to gas mark 6.
  2. In A clean bowl separate eggs put the whites in a bowl and the yolks in another bowl with the sugar and butter mix till light and fluff.
  3. Whisk the egg whites till stiff peaks form. Place half the whites in the other mixture beat it in quickly then add the flour beat it in as well.
  4. Then very slowly fold the rest of the egg whites in.
  5. Pour the mixture into a grease 9in tin cover the top with a piece of waxed paper to protect the top from being burnt.
  6. Cook for 25 mins or until a clean blade comes out of the centre of the cake. When cooled dust with icing sugar.
