This is the easiest and most delicious tomato sauce ever. I got it from a magazine years ago, and it has been a favourite ever since. You MUST use butter for this - don't even contemplate substituting olive oil!

Ingredients
Switch to Cup Measures- 1 can tinned tomatoes
- 1 large onion
- 75 grams butter
- 1 teaspoon sugar
- 1 pinch of salt (to taste)
Method
- Melt the butter, let the chopped onion simmer in the butter and soften for a while before adding the tomatoes and the sugar and some salt
- Cover, and leave to simmer GENTLY for 2 hours
- Check it every now and then. I use a small saucepan for this, not a frying pan with a large base
- Serve with pasta (I use whatever I happen to have at home) Makes enough for about three people. Multiply recipe for larger gatherings... Enjoy!
