Everyone's Favourite Pork Chops

Introduction

I can't take credit for this; I found it on the back of a Kikkoman soy sauce bottle but it is SO DELICIOUS I had to share it! The pork chops come out meltingly tender and savoury, I do it with egg-fried rice(if I've got any cooked rice in the fridge) or over Chinese noodles with some steamed broccolli-fab. FWIW I omitted the tomatoes (just didn't have any the first time I did it) and doubled up on the onions, water, garlic powder & pepper-just because I like a lot of sauce, & I like it savoury! Also bear in mind that this also works in the oven as well as stovetop-just prep the chops then bung them in a med. oven to cook.

Ingredients

Serves: 4

  • ¼ cup all-purpose flour
  • ¼ teaspoon garlic powder
  • ¼ teaspoon pepper
  • 6 pork chops
  • 1 tablespoon vegetable oil
  • 2 medium chopped tomatoes
  • 1 medium thinly sliced onion
  • 3 tablespoons soy sauce
  • ⅓ cup water

  • Combine flour, garlic powder & pepper; coat chops with the mixture (easiest done with mix & chops slung together in a plastic bag).
  • Brown chops on both sides in hot oil-you may need to do these in batches or 2 separate pans-on med-high heat.
  • Sprinkle tomatoes & onions over chops, pour soy & water over all. Cover & simmer 45 mins (or put in a medium oven, preferably in a metal dish) or until tender, turning chops once halfway through cooking time. Personally, I let it 'sit' for a few minutes off the heat & give it a bit of a stir before serving it up which allows the sauce to thicken up a little.
  • Serve it over egg fried rice or noodles as desired, with or without whatever steamed greens you have to hand. A handful of chopped coriander on top wouldn't go amiss either. Totally delicious-enjoy!
