Ingredients

Serves: 2

Metric Cups
  • 1 packet ravioli (or tortellini)
  • 1 bunch romaine lettuce (chopped)
  • 125 millilitres Parmesan cheese
  • 1 medium egg yolk
  • 188 millilitres olive oil
  • ½ teaspoon black pepper
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon mustard
  • 3 cloves garlic (minced)
  • 63 millilitres lemon juice
  • 2 anchovy paste
  • 500 millilitres croutons
  • 1 packet ravioli (or tortellini)
  • 1 bunch romaine lettuce (chopped)
  • 4 fluid ounces Parmesan cheese
  • 1 medium egg yolk
  • 7 fluid ounces olive oil
  • ½ teaspoon black pepper
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon mustard
  • 3 cloves garlic (minced)
  • 2 fluid ounces lemon juice
  • 2 anchovy paste
  • 18 fluid ounces croutons

  • Chop romaine, set aside. Place egg yolk in bowl, mix on high speed. Slowly add oil until it thickens.
  • Whisk in all else, except parmesan & croutons & romaine.
  • Boil your tortelinis...drain. Place in large bowl...
  • Immediately toss with dressing, romaine & sprinkle with parmesan. DIVINE!
