What does this mean?

If you love caesar salad...you will adore this recipe. I had something similar in Newport Beach, California. I recreated this...and it's dead EASY! Optional: grilled prawns added

Ingredients

Switch to Cup Measures
  • 1 packet ravioli (or tortellini)
  • 1 bunch Romaine lettuce (chopped)
  • 125 ml Parmesan cheese
  • 1 medium egg yolk
  • 188 ml olive oil
  • ½ teaspoon black pepper
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon mustard
  • 3 cloves garlic (minced)
  • 63 ml lemon juice
  • 2 anchovy paste
  • 500 ml croutons

Method

  1. Chop romaine, set aside. Place egg yolk in bowl, mix on high speed. Slowly add oil until it thickens.
  2. Whisk in all else, except parmesan & croutons & romaine.
  3. Boil your tortelinis...drain. Place in large bowl...
  4. Immediately toss with dressing, romaine & sprinkle with parmesan. DIVINE!
