  • 1 fillet steak (beef)
  • 15 grams wholegrain mustard
  • 4 gherkins (finely chopped - or apricots)
  • 1 small onion (finely chopped)
  • 1 clove garlic (minced)
  • 250 grams streaky bacon
  • 1 fillet steak (beef)
  • 1 ounce wholegrain mustard
  • 4 gherkins (finely chopped - or apricots)

  • 9 ounces bacon

Method

  • Slit the fillet lengthwise without cutting right through. Open up like a book.
  • Mix the rest of the ingredients apart from the streaky bacon. Season with freshly ground black pepper. Spread evenly inside the fillet. Close the fillet again.
  • Wrap streaky bacon around the fillet, securing each piece with a toothpick. Barbecue over medium coals, turning once, until done to your liking.
  • Remove toothpicks before serving.
