Ingredients

Switch to Cup Measures
  • 4 sprigs fresh flatleaf parsley (finely chopped)
  • 59 grams feta cheese (crumbled)
  • 29 large green olives (pitted)
  • 3 tablespoons flour
  • 1 medium egg (beaten)
  • 30 grams breadcrumbs
  • vegetable oil

Method

  1. Mix the chopped parsley with the crumbled feta and mix well. 
  2. Stuff the olives with some of this mixture. 
  3. Put the flour in a shallow dish, and whip the egg in a second dish and the breadcrumbs in a 3rd dish. 
  4. Heat the oil in a deep pan on medium heat. 
  5. Place some olives at a time in the flour, then in the egg and last in the breadcrumbs. 
  6. Fry them 1 minute in the oil until golden brown. With slotted spoon remove from frying pan and let them drip on a papertowel. Fry more...
