FRUIT FILLED BUTTERMILK SCONES

Too yummy, Serve these light & moist scones with butter & jam. I love these tasty scones.

Ingredients

  • 3 cups flour
  • 2 heaped tsp baking powder
  • pinch of salt
  • 60 g butter
  • 1 ½ cups buttermilk
  • 1 cup dried fruit (currants & chopped apricots work well)

Method

  1. Preheat the oven to 230C Place the flour salt & baking powder in the food processor & whirl together. Add the butter (in pieces, not whole) & then when the mixture is fully integrated & resembles fine breadcrumbs you are ready to add the buttermilk.
  2. Shake the buttermilk. Place the flour/butter mixture into a large bowl & with a knife add the buttermilk, with the dried fruit. Keep the mixture wet, add more buttermilk if necessary (I always ended up adding more probably another ¼ of a cup).
  3. Place the mixture on a floured bench & gently pat out into shape with a quick knead (about 6 times only) & use small round glass & cut out rounds, I pop a slice of cheese on top very yummy.
  4. Bake at 230c for about 10 mins. (original recipe said 15-20 mins, it depends on size of scones)
