Metric Cups
  • 500 grams summer berries (blueberries raspberries blackberries)
  • demerara sugar
  • fruit loaf
  • butter
  • creme fraiche (or cream or ice cream to serve)
  • 18 ounces summer berries (blueberries raspberries blackberries)
  • turbinado sugar
  • fruit loaf

Method

  • Put 2/3 of the fruit into a suitable baking dish
  • Puree the rest of the fruit and mix in (if there's no food processor in your holiday house, just pour in all the fruit at once).
  • Sprinkle with 2 tbsp sugar Top with buttered triangles of the raisin bread Sprinkle further 2 tbsps sugar over the top
  • Bake, covered with foil, for 10 minutes at 220 degrees then uncover for a further 5 minutes until triangles of bread are golden brown
  • Serve with creme fraiche or your preferred accompaniment (clotted cream??)
