This is such a yummy loaf and such a treat seeing as any gluten free product I have bought has that same old gritty dryness! This doesn't, I serve it hot with gluten and dairy free vanilla ice cream...mmmm!!!

This is such a yummy loaf and such a treat seeing as any gluten free product I have bought has that same old gritty dryness! This doesn't, I serve it hot with gluten and dairy free vanilla ice cream...mmmm!!!

Ingredients

Serves: 6

Metric Cups
  • 40 grams cherries
  • 75 grams sultanas
  • 110 grams butter (softened)
  • 175 grams white rice flour
  • 2 teaspoons baking powder (gluten free)
  • 110 grams caster sugar
  • 2 large eggs (free range)
  • 3 large bananas (ripe)
  • 50 grams cornflour
  • fresh ginger (grated - or ground ginger)
  • cinnamon
  • nutmeg
  • 1 splash of brandy (or whisky)
  • 1⅖ ounces cherries
  • 2⅔ ounces golden raisins
  • 3⅞ ounces butter (softened)
  • 6⅙ ounces white rice flour
  • 2 teaspoons baking powder (gluten free)
  • 3⅞ ounces superfine sugar
  • 2 large eggs (free range)
  • 3 large bananas (ripe)
  • 1¾ ounces cornstarch
  • fresh gingerroot (grated - or ground ginger)
  • cinnamon
  • nutmeg
  • 1 splash of brandy (or whisky)

Method

  • Soak the cherries and sultanas in the alcohol and leave for a while.
  • Cream the butter and sugar until pale and fluffy, add eggs one at a time beating well in between each addition.
  • Mash the banana and add to mix.
  • Sift flour, cornflour, baking powder, spices and fold carefully into the mixture.
  • Stir in the fruit but drain it well first.
  • Bake in a well lined or greased loaf tin for 1 and quarter to 1 and half hours. enjoy!!!

    • What temp should this be baked at? Husband loves banana bread, and the addition of cherries will make him drool!! Would like to try it.
